I wanted to do something exactly like that but am worried about the legalities of having something obstruct my view of the road. I don't believe it would be a problem, but I'm not a fan of getting pulled over. IMHO not having to look further away from the road ahead is a win. For instance: looking down at a tank bag, or even off to the side for a bar mounted version, is no good compared to your setup. With this setup, despite the obvious advantage, it seems like it could be an issue legally, but not logically.
I guess I'll ask a cop or highway patrol if I see one.
Sweet having those cameras for security AND for the oddball stuff that we see on the road. Do you have it linked to a Sena/Cardo or whatever helmet system? Everything play nicely with each other?
