I am changing my stock grips and would like to know how important is it to add weight to the ends of new grips, do I have to or not.

A pricey, but very nice looking fix, would be to purchase the Throttlemeister throttle lock kit. That replaces the bar ends with their own very handsome machined aluminum ones.
